Description

Carrots belong to the Apiaceae family. Although their leaves are edible, carrots are cultivated primarily for their roots. The root of the wild carrot is white, while the cultivated carrot is typically red or orange but can also be white, yellow or purple. This coloration results from the presence of β-carotene, which the body converts into vitamin A. Carrots are biennial plants; in the first year, they store nutrients in the root, and in the second year, they produce flowers.
